1 large head of cauliflower, cut into florets

2 tablespoons olive oil

2 teaspoons smoked paprika

1 teaspoon cumin

½ teaspoon garlic powder

½ teaspoon onion powder

Salt and black pepper, to taste

8 small corn tortillas

1 cup red cabbage, thinly sliced

1 avocado, sliced

½ cup fresh cilantro, chopped

1 lime, cut into wedges

Optional: hot sauce for drizzling

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Cauliflower: In a large bowl, combine the cauliflower florets, olive oil, smoked paprika, cumin, garlic powder, onion powder, salt, and black pepper. Toss until the florets are well coated in the seasoning mix.

      Roast the Cauliflower: Spread the seasoned cauliflower evenly on the prepared baking sheet. Roast in the preheated oven for about 25-30 minutes, flipping halfway through, until the cauliflower is golden brown and tender.

        Warm the Tortillas: While the cauliflower is roasting, heat the corn tortillas on a dry skillet over medium heat for about 30 seconds on each side or until they are warm and pliable.

          Assemble the Tacos: Once the cauliflower is roasted, remove it from the oven. To assemble each taco, layer a few cauliflower florets on a warm tortilla. Top with sliced red cabbage, avocado slices, and a sprinkle of fresh cilantro.
