One-Pot Beef and Cheddar Ranch Pasta

1 lb (450 g) ground beef

2 cups uncooked penne pasta

1 packet (1 oz) ranch seasoning mix

4 cups beef broth

1 cup shredded sharp cheddar cheese

1 cup heavy cream

1 cup diced tomatoes with green chilies (canned)

1 tablespoon olive oil

1/2 onion, chopped

2 cloves garlic, minced

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Sauté the Meat: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onions and minced garlic, cooking until softened, about 2-3 minutes. Then, add the ground beef, breaking it up with a spoon. Cook until browned, about 5-7 minutes. Drain excess fat if necessary.

    Add Pasta and Seasoning: Stir in the ranch seasoning mix and cook for 1 more minute, allowing the flavors to develop. Next, add the uncooked penne pasta to the pot, followed by the diced tomatoes with green chilies.

      Pour in the Broth: Slowly add the beef broth, making sure the pasta is submerged. Bring the mixture to a gentle boil, then reduce to a simmer. Cover the pot and let it cook for about 12-15 minutes, or until the pasta is al dente, stirring occasionally.

        Creamy Finish: Once the pasta is cooked, stir in the heavy cream and half of the shredded cheddar cheese. Cook for an additional 2-3 minutes, allowing the cheese to melt and the sauce to thicken.
