1 lb (450g) boneless, skinless chicken thighs, diced

1 can (15 oz) black beans, drained and rinsed

1 medium red onion, diced

2 cloves garlic, minced

1 bell pepper (red or green), diced

1 tbsp olive oil

2 tsp chili powder

1 tsp cumin

½ tsp smoked paprika

¼ tsp cayenne pepper (adjust for spice level)

Salt and black pepper to taste

Juice of 1 lime

8 small corn or flour tortillas

Fresh cilantro, chopped, for garnish

Avocado slices, for serving

Salsa or hot sauce, for serving

Instructions
 

Heat the Oil: In a large skillet, heat the olive oil over medium-high heat.

    Cook the Chicken: Add the diced chicken thighs to the skillet, season with salt, black pepper, chili powder, cumin, smoked paprika, and cayenne. Sauté for 5-7 minutes, or until the chicken is browned and cooked through. Stir occasionally to ensure even cooking.

      Add Vegetables: Incorporate the diced onion, bell pepper, and minced garlic into the skillet. Sauté for an additional 3-4 minutes, until the vegetables are tender.

        Mix in Black Beans: Add the rinsed black beans to the skillet, stirring well to combine. Cook for another 2-3 minutes to warm up the beans.

          Add Lime Juice: Squeeze the fresh lime juice over the mixture and stir well to incorporate the flavors.

            Warm the Tortillas: In a separate skillet or directly over a flame, warm the tortillas for about 30 seconds on each side, or until slightly charred and pliable.

              Assemble Tacos: Spoon the spicy chicken and black bean mixture onto each tortilla.

                Garnish and Serve: Top with fresh cilantro and avocado slices. Serve with salsa or hot sauce on the side for added flavor.
