1 lb large shrimp, peeled and deveined

1 cup quinoa, rinsed

2 cups vegetable or chicken broth

1 medium onion, finely chopped

4 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon paprika

1 teaspoon red pepper flakes (adjust to taste)

Juice and zest of 1 large lemon

1 cup cherry tomatoes, halved

1 cup spinach, roughly chopped

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Sauté the Base: In a large skillet or pan, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic, paprika, and red pepper flakes, cooking for an additional minute until fragrant.

    Add Quinoa and Broth: Pour in the rinsed quinoa and stir to combine with the onion and garlic mixture. Add the vegetable or chicken broth, lemon zest, and a pinch of salt and pepper.
