Ingredients

1 pound large shrimp, peeled and deveined

1 bunch asparagus, trimmed and cut into 2-inch pieces

4 cloves garlic, minced

1 lemon, zested and juiced

3 tablespoons olive oil

1 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

1 teaspoon Italian seasoning

Optional: lemon slices for garnish

Instructions

Prepare the Ingredients: Rinse the shrimp under cold water and pat them dry with a paper towel. Trim the asparagus and cut into 2-inch pieces. Mince the garlic and set aside.

Season the Shrimp: In a mixing bowl, combine the shrimp, half of the olive oil, lemon juice, lemon zest, red pepper flakes, Italian seasoning, salt, and pepper. Let it marinate for about 15 minutes while you prepare the asparagus.

Sauté the Asparagus: In a large skillet or pan, heat the remaining olive oil over medium-high heat. Add the asparagus pieces and cook for about 3-4 minutes until they start to become tender and bright green.

Add Garlic: Stir in the minced garlic to the pan with the asparagus. Sauté for an additional 1-2 minutes until fragrant, but be careful not to burn the garlic.

Cook the Shrimp: Push the asparagus to the sides of the pan, creating space in the center. Add the marinated shrimp and cook for 2-3 minutes on each side until the shrimp are pink and opaque.

Combine and Serve: Mix the shrimp and asparagus together in the pan until everything is well combined. Taste and adjust seasoning if needed. Remove from heat.

Garnish: Sprinkle with fresh parsley and add lemon slices on top for a beautiful presentation.

Serve Hot: Serve immediately as a delightful main dish or alongside a bed of rice or quinoa.
