4 boneless, skinless chicken breasts

Salt and black pepper to taste

2 tablespoons olive oil

4 cloves garlic, minced

1 can (14 oz) diced tomatoes, undrained

1 cup heavy cream

1 teaspoon Italian seasoning

1 cup fresh basil leaves, chopped (plus more for garnish)

1 cup grated Parmesan cheese

1 cup spinach (optional)

Lemon wedges, for serving

Season the Chicken: Pat the chicken breasts dry with paper towels and season both sides with salt and pepper.

    Sear the Chicken: In a large skillet or pan, heat the olive oil over medium-high heat. Once hot, add the chicken breasts and cook for about 5-7 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/75°C). Remove the chicken from the pan and set aside.

      Prepare the Sauce: In the same pan, lower the heat to medium and add the minced garlic. Sauté for about 1 minute until fragrant. Then, add the diced tomatoes (including the juices) and stir to combine.
