4 boneless, skinless chicken thighs (about 1.5 lbs)

2 tablespoons olive oil

Salt and black pepper, to taste

3 cloves garlic, minced

1 medium onion, diced

1 cup fresh spinach, roughly chopped

1 cup cherry tomatoes, halved

1 teaspoon Italian seasoning

1 cup heavy cream

½ cup grated Parmesan cheese

Zest of 1 lemon

Fresh basil leaves, for garnish

Prep the Chicken: Season the chicken thighs on both sides with salt and pepper.

    Sear the Chicken: In a large skillet over medium heat, heat the olive oil. When hot, add the chicken thighs and sear for about 5-7 minutes on each side until golden brown and cooked through. Remove from the skillet and set aside.
