One-Pan Cheesy Chicken and Broccoli Bake

2 cups uncooked rotini pasta

1 lb (450g) boneless, skinless chicken breast, cut into bite-sized pieces

2 cups broccoli florets (fresh or frozen)

1 cup shredded sharp cheddar cheese

1 cup shredded mozzarella cheese

1 cup chicken broth

1 cup milk

1/2 cup cream cheese, softened

2 cloves garlic, minced

1 teaspoon onion powder

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

1 tablespoon olive oil

Fresh parsley, chopped (for garnish)

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté Chicken: In a large oven-safe skillet or a cast-iron pan, heat olive oil over medium heat. Add the bite-sized chicken pieces, sprinkle with onion powder, garlic powder, paprika, salt, and pepper. Sauté for about 5-7 minutes, until the chicken is no longer pink.

      Add Garlic: Stir in the minced garlic and sauté for an additional minute until fragrant.

        Combine Ingredients: Add the uncooked rotini pasta, broccoli florets, chicken broth, and milk to the skillet. Stir well to combine.

          Cream Cheese Incorporation: Reduce heat to low and add the softened cream cheese. Mix until the cream cheese is fully incorporated and the mixture begins to look creamy.

            Cheese It Up: Sprinkle 1/2 cup of cheddar cheese and 1/2 cup of mozzarella cheese on top of the mixture. Stir to distribute evenly.

              Bake: Transfer the skillet to the preheated oven. Bake uncovered for 20-25 minutes or until the pasta is tender and most of the liquid is absorbed.
