1 lb (450g) ground beef

1 cup quinoa, rinsed

2 cups beef broth

1 medium onion, diced

3 cloves garlic, minced

1 bell pepper (any color), diced

1 can (15 oz) black beans, drained and rinsed

1 can (14.5 oz) diced tomatoes, with juice

1 cup corn (frozen or canned)

2 tsp chili powder

1 tsp cumin

1 tsp smoked paprika

Salt and black pepper, to taste

1 ½ cups shredded cheddar cheese (or a cheese blend)

Fresh cilantro or parsley, for garnish (optional)

Instructions
 

Preheat the oven: Preheat your oven to 375°F (190°C).

    Cook the beef: In a large oven-safe skillet or pan over medium heat, add the ground beef. Cook, breaking it up with a spatula until browned (about 5-7 minutes). Drain excess fat if necessary.

      Sauté the vegetables: Add the diced onion and bell pepper to the skillet. Sauté for about 3-4 minutes until they start to soften. Stir in the minced garlic and cook for an additional 1 minute until fragrant.

        Add quinoa and spices: Stir in the rinsed quinoa, beef broth, black beans, diced tomatoes (with juices), corn, chili powder, cumin, smoked paprika, salt, and pepper. Bring the mixture to a simmer.

          Combine and simmer: Cover the skillet with a lid and allow the mixture to simmer for about 15 minutes, or until the quinoa is cooked and has absorbed most of the liquid.

            Add cheese: Remove the lid and sprinkle the shredded cheddar cheese evenly over the top of the beef and quinoa mixture.

              Bake it: Transfer the skillet to the preheated oven and bake for another 10-15 minutes, or until the cheese is bubbly and golden.

                Garnish and serve: Remove the skillet from the oven (be careful, it's hot!). Optionally, garnish with fresh cilantro or parsley before serving.
