1 lb chicken breast, sliced into thin strips

8 oz linguine pasta

4 tbsp olive oil

4 tbsp unsalted butter

4 cloves garlic, minced

1/2 cup dry white wine (like Sauvignon Blanc)

1/2 cup chicken broth

1/4 tsp red pepper flakes (or more to taste)

Salt and black pepper to taste

1 cup fresh spinach, roughly chopped

1/2 cup sun-dried tomatoes, chopped

Juice of 1 lemon

1/4 cup grated Parmesan cheese

Chopped fresh parsley for garnish

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the linguine according to package instructions until al dente. Reserve about 1/2 cup of pasta water before draining. Set the cooked pasta aside.

    Sauté the Chicken: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Season the chicken strips with salt and black pepper. Add the chicken to the skillet and cook until golden brown and fully cooked, about 5-7 minutes. Remove the chicken from the skillet and set aside.

      Prepare the Sauce: In the same skillet, lower the heat to medium, add the remaining olive oil and butter. Once the butter is melted, add the minced garlic and red pepper flakes, sautéing for about 1 minute until fragrant.

        Add Liquids: Pour in the white wine and chicken broth, scraping up any browned bits from the bottom of the skillet. Bring the mixture to a gentle simmer for about 3-5 minutes, allowing it to reduce slightly.

          Combine Ingredients: Stir in the sun-dried tomatoes and chopped spinach, cooking until the spinach wilts. Return the cooked chicken to the skillet, then add the reserved pasta and lemon juice. Toss everything together to combine, adding reserved pasta water if needed to achieve your desired sauce consistency.

            Finish and Serve: Remove the skillet from heat and stir in the Parmesan cheese until melted. Taste and adjust seasoning if needed. Serve the Chicken Scampi in bowls, garnished with additional parsley and lemon wedges if desired.
