Old-Fashioned Amish Beef and Potato Casserole

1 lb ground beef

4 medium russet potatoes, peeled and thinly sliced

1 large onion, finely chopped

1 can (10.5 oz) condensed cream of mushroom soup

1 cup beef broth

1 cup shredded cheddar cheese

1 tbsp Worcestershire sauce

1 tsp garlic powder

1 tsp salt

½ tsp black pepper

1 tsp dried thyme

1 tbsp olive oil

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Cook the Beef: In a large skillet, heat the olive oil over medium heat. Add the ground beef and onion, cooking until the beef is browned and the onion is soft, about 5-7 minutes. Drain any excess fat.

      Mix the Sauce: In a medium bowl, combine the cream of mushroom soup, beef broth, Worcestershire sauce, garlic powder, salt, pepper, and dried thyme. Mix until well blended.

        Layer the Ingredients: In a greased 9x13-inch baking dish, spread half of the sliced potatoes evenly across the bottom. Follow with half of the cooked beef mixture, then pour half of the soup mixture over it. Repeat the layers with the remaining ingredients, finishing with the soup mixture on top.

          Cover and Bake: Cover the baking dish with aluminum foil and bake in the preheated oven for 1 hour.

            Add Cheese: After 1 hour, carefully remove the foil and sprinkle the shredded cheddar cheese over the top of the casserole. Return to the oven uncovered and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.

              Cool and Serve: Once done, remove from the oven and let it cool for about 10 minutes. Garnish with fresh parsley before slicing and serving.
