1 cup rolled oats

1 ½ cups milk (or dairy-free alternative)

1.5 cups all-purpose flour

1 cup brown sugar, packed

½ cup granulated sugar

½ cup unsweetened applesauce

1/3 cup vegetable oil

2 large eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1 teaspoon baking powder

½ teaspoon salt

1 teaspoon cinnamon

1 cup raisins or chocolate chips (optional)

½ cup chopped nuts (walnuts or pecans, optional)

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a standard muffin tin with cupcake liners or grease it lightly.

    Soak Oats: In a large mixing bowl, combine the rolled oats and milk. Let them soak for about 15-20 minutes to soften the oats, making a delicious base for your cupcakes.

      Mix Wet Ingredients: In another bowl, whisk together the brown sugar, granulated sugar, applesauce, vegetable oil, eggs, and vanilla extract until well combined.

        Combine Mixtures: After the oats have soaked, add the wet mixture to the bowl with oats. Stir until everything is evenly mixed.

          Sift Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking soda, baking powder, salt, and cinnamon.

            Combine Dry and Wet: Gradually add the dry ingredients to the oat mixture. Stir until just combined. Be careful not to overmix. If desired, fold in the raisins or chocolate chips and the chopped nuts at this stage.

              Fill Cupcake Liners: Spoon the batter into the prepared muffin tin, filling each liner about 2/3 full.

                Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes or until a toothpick inserted into the center of a cupcake comes out clean.

                  Cool: Once baked, remove from the oven and allow the cupcakes to cool in the tin for about 5 minutes. Then, transfer them to a wire rack to cool completely.
