1 lb (450g) boneless, skinless chicken breast, sliced into thin strips

2 cups fresh green beans, trimmed

1 bell pepper (red or yellow), sliced into strips

3 cloves garlic, minced

1 inch piece of ginger, minced

2 tablespoons vegetable oil (canola or sesame oil)

3 tablespoons soy sauce

1 tablespoon oyster sauce (optional for extra depth)

1 teaspoon cornstarch mixed with 2 tablespoons of water (to thicken the sauce)

1 tablespoon rice vinegar

1 teaspoon honey or maple syrup

Salt and pepper to taste

Cooked jasmine or brown rice for serving

Sesame seeds and sliced green onions for garnish

Instructions
 

Prepare the Ingredients: Before starting, make sure all the ingredients are prepped. Slice the chicken, trim the green beans, and slice the bell pepper. This will make the cooking process smoother.

    Marinate the Chicken: In a bowl, combine the sliced chicken with 1 tablespoon of soy sauce, a pinch of salt, and pepper. Let it marinate for about 15-20 minutes while you prepare the vegetables.

      Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the marinated chicken to the pan in a single layer. Stir-fry for about 5-7 minutes, until the chicken is browned and cooked through. Remove the chicken from the pan and set aside.

        Stir-Fry the Vegetables: In the same pan, add a bit more oil if needed. Add the minced garlic and ginger, stirring quickly for about 30 seconds until fragrant. Then, add the green beans and bell peppers. Stir-fry for about 4-5 minutes, until the vegetables are bright and tender-crisp.

          Combine Everything: Return the cooked chicken to the pan with the vegetables. Pour the remaining soy sauce, oyster sauce (if using), rice vinegar, and honey or maple syrup over the mixture. Stir to combine well.

            Thicken the Sauce: Pour the cornstarch mixture into the pan, stirring continuously for another 1-2 minutes until the sauce thickens slightly, coating the chicken and vegetables.

              Serve: Remove from heat, taste, and adjust seasoning if needed. Serve over cooked jasmine or brown rice, garnished with sesame seeds and sliced green onions.
