2 cups fresh strawberries, hulled and sliced

1 cup Greek yogurt (vanilla or plain)

1 cup heavy cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup crushed graham crackers

4 tablespoons unsalted butter, melted

Fresh mint leaves for garnish (optional)

Prepare the crust: In a mixing bowl, combine the crushed graham crackers and melted butter. Mix until the crumbs are well coated. Press the mixture evenly into the bottom of a 9-inch springform pan to form a crust layer. Place it in the refrigerator to chill while you prepare the filling.

    Make the strawberry layer: In a blender or food processor, blend half of the strawberries until smooth. In a separate bowl, combine the Greek yogurt, powdered sugar, and vanilla extract. Mix until well combined. Fold in the blended strawberries to create a delightful strawberry yogurt mixture.

      Whip the cream: In another mixing bowl, whip the heavy cream until stiff peaks form. Gently fold the whipped cream into the strawberry yogurt mixture until fully incorporated. This step gives the dessert its light and airy texture.

        Layer the mixture: Remove the crust from the refrigerator. Spoon half of the strawberry yogurt mixture onto the crust, spreading it evenly. Add a layer of the remaining sliced strawberries on top. Then, pour the rest of the strawberry yogurt mixture over the strawberries, smoothing it out with a spatula.

          Chill the dessert: Cover the springform pan with plastic wrap and refrigerate for at least 4 hours, or overnight, to allow it to set properly.
