2 cups fresh ripe peaches, peeled and diced

1 tablespoon lemon juice

2 tablespoons honey or maple syrup (adjust based on peach sweetness)

1 teaspoon vanilla extract

1 cup Greek yogurt or whipped coconut cream

1 cup granola or crushed cookie crumbs (your choice)

12 soft oatmeal cookies (store-bought or homemade)

Fresh mint leaves for garnish (optional)

Prepare the Peaches: In a bowl, combine the diced peaches with lemon juice, honey (or maple syrup), and vanilla extract. Toss gently to coat the peaches evenly. Allow to marinate for about 10 minutes to enhance the flavors.

    Make the Ice Cream Filling: In a separate bowl, mix the Greek yogurt (or whipped coconut cream) with half of the marinated peach mixture, mashing the peaches slightly to swirl them into the yogurt. If using whipped coconut cream, fold in the peaches gently to keep it light and airy. Set aside.
