Ingredients

2 cups fresh strawberries, hulled and sliced

1 cup Greek yogurt (plain or vanilla)

1 cup granola (store-bought or homemade)

2 tablespoons honey or maple syrup (optional, adjust for sweetness)

1 teaspoon vanilla extract (if using plain yogurt)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Strawberries: In a medium bowl, combine sliced strawberries with 1 tablespoon of honey or maple syrup (if desired). Let them sit for about 10 minutes to macerate and release their juices.

Mix the Yogurt: In another bowl, mix the Greek yogurt with the remaining honey or maple syrup and vanilla extract until smooth and well combined.

Layer the Parfaits: In serving glasses or bowls, start by adding a layer of the honeyed Greek yogurt at the bottom. Follow this with a layer of the macerated strawberries, then sprinkle a layer of granola. Repeat the layers until the glasses are full, finishing with a layer of strawberries on top.

Garnish: If desired, add a sprig of fresh mint on top for an added touch of color and freshness.

Chill and Serve: Refrigerate the parfaits for at least 30 minutes to let the flavors meld and to keep the yogurt cool. Serve chilled.
