Ingredients

24 Oreo cookies + 6 extra for garnish

4 tablespoons unsalted butter, melted

16 oz cream cheese, softened

1 cup powdered sugar

1 teaspoon vanilla extract

2 cups heavy whipping cream

1 cup sour cream

1 teaspoon lemon juice (optional)

A pinch of salt

Instructions

Prepare the Crust: Start by crushing the 24 Oreo cookies into fine crumbs using a food processor or a zip-top bag with a rolling pin. Combine the cookie crumbs with melted butter in a bowl and mix until everything resembles wet sand.

Form the Crust: Press the Oreo mixture firmly into the bottom of a 9-inch springform pan, making sure to create an even layer. Place in the refrigerator to set while you prepare the filling.

Make the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy, about 2-3 minutes. Gradually add powdered sugar, vanilla extract, and a pinch of salt, mixing well until fully combined.

Fold in Sour Cream: Add sour cream to the cream cheese mixture, incorporating it gently until just combined. If using, mix in the lemon juice for a slight tang.

Whip the Cream: In another bowl, whip the heavy cream on high speed until stiff peaks form, about 3-5 minutes. Be careful not to over-whip.

Combine Mixtures: Gently fold the whipped cream into the cream cheese mixture in three additions, being careful not to deflate the whipped cream.

Add Crushed Oreos: Chop the 6 extra Oreos into small pieces and gently fold them into the cheesecake filling, distributing them evenly throughout.

Assemble the Cheesecake: Pour the cheesecake filling over the prepared Oreo crust, smoothing the top with a spatula. Cover with plastic wrap and refrigerate for at least 4-6 hours, or overnight if possible, until set.

Serve: Once set, carefully remove the sides of the springform pan. Slice into wedges, garnish with additional crushed Oreos or whipped cream if desired, and enjoy this decadent dessert!
