Ingredients

For the Base:

200g digestive biscuits, crushed

100g unsalted butter, melted

2 tablespoons brown sugar

For the Caramel Layer:

200g sweetened condensed milk

100g unsalted butter

100g brown sugar

1 tablespoon golden syrup (or corn syrup)

For the Chocolate Topping:

200g dark chocolate (minimum 70% cocoa), chopped

50g milk chocolate, chopped

Sea salt for sprinkling (optional)

Instructions

Make the Base:

    - In a mixing bowl, combine the crushed digestive biscuits, melted butter, and brown sugar. Mix well until everything is evenly combined and resembles damp sand.

      - Press the mixture firmly into the base of a lined 9-inch square baking tin, ensuring it forms an even layer. Chill in the fridge while you prepare the caramel layer.

        Prepare the Caramel Layer:

          - In a medium saucepan over low heat, combine the sweetened condensed milk, butter, brown sugar, and golden syrup. Stir continuously until the mixture reaches a smooth consistency and begins to bubble.

            - Cook for 5-7 minutes, stirring constantly until the caramel thickens and turns a rich golden color.

              - Remove from heat and carefully pour the caramel over the chilled biscuit base, spreading it evenly. Place the tin back in the fridge to set for about 1-2 hours.

                Make the Chocolate Topping:

                  - In a heatproof bowl, combine the chopped dark and milk chocolate. Melt the chocolate over a pot of simmering water (double boiler method) or in the microwave in 30-second intervals, stirring until completely smooth.

                    - Once melted, pour the chocolate over the set caramel layer, spreading it out evenly. For an elegant touch, sprinkle a pinch of sea salt over the top.

                      Chill and Serve:

                        - Place the completed Millionaire's Shortbread back in the fridge to chill for at least 30 more minutes, or until the chocolate has fully set.

                          - Once set, carefully lift it out of the tin using the edges of the lining, cut it into squares or bars, and serve. Enjoy this decadent treat!
