1 cup rolled oats

1 cup unsweetened shredded coconut

1/2 cup almond butter (or any nut/seed butter of your choice)

1/2 cup maple syrup (or honey)

1 cup ripe mango puree (fresh or canned)

1/2 teaspoon vanilla extract

1/4 teaspoon sea salt

1/4 cup chopped pistachios (for garnish, optional)

Fresh mango slices (optional, for serving)

Instructions
 

Prepare the Base: In a large mixing bowl, combine the rolled oats and shredded coconut. Mix them well to evenly distribute the dry ingredients.

    Add Wet Ingredients: In a separate bowl, mix together the almond butter, maple syrup, mango puree, vanilla extract, and sea salt until smooth.

      Combine Mixtures: Pour the wet mixture into the bowl with the oats and coconut. Stir thoroughly until all the ingredients are well combined and the mixture sticks together.

        Set the Bars: Line an 8-inch square baking dish with parchment paper, leaving some overhang for easy removal. Press the mixture firmly into the bottom of the dish in an even layer.

          Chill: Place the dish in the refrigerator for at least 2 hours to allow the bars to set. The longer you chill them, the firmer they will become.
