1 cup ripe mango puree (fresh or canned)

1 tablespoon gelatin (optional, for firmness)

2 tablespoons cold water (if using gelatin)

1 cup mango slices (fresh or canned)

Instructions
 

Prepare the Crust:

    - In a mixing bowl, combine the crushed digestive biscuits and sugar. Pour in the melted butter and mix until well combined and the mixture resembles wet sand.

      - Press the biscuit mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Use the back of a measuring cup or your fingers to pack it down tightly. Refrigerate for at least 30 minutes to set.

        Make the Cheesecake Filling:

          - In a large mixing bowl, beat the softened cream cheese using an electric mixer until smooth and creamy.

            - Add the powdered sugar and vanilla extract, mixing until well incorporated.

              - In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until just combined.

                - If using gelatin, sprinkle it over 2 tablespoons of cold water in a small bowl and let it bloom for 5 minutes. Then, warm gently (either in a microwave in 5-second bursts or over a double boiler) until completely dissolved. Mix the gelatin with the mango puree. If not using gelatin, simply blend the mango puree directly into the cheesecake mixture.
