1/2 cup almond flour

1/4 cup honey or maple syrup

Zest of 1 large lemon

2 tablespoons fresh lemon juice

1/4 cup almond or peanut butter

1/4 cup mini chocolate chips (optional)

Combine Dry Ingredients: In a large mixing bowl, combine the rolled oats, shredded coconut, almond flour, and salt. Stir well to ensure even distribution.

    Mix Wet Ingredients: In a separate bowl, whisk together the honey (or maple syrup), fresh lemon juice, and lemon zest until smooth. If using almond or peanut butter, whisk it in at this stage until fully combined.

      Combine: Pour the wet mixture into the dry ingredients. Stir everything together until you have a sticky, cohesive mixture. If you’d like to add mini chocolate chips for an extra treat, fold them in at this stage.
