Ingredients

1 cup unsweetened shredded coconut

1 cup crushed graham crackers (or gluten-free alternative)

½ cup coconut oil, melted

¼ cup maple syrup (or honey)

1 teaspoon vanilla extract

1 cup mixed berries (strawberries, blueberries, raspberries)

1 cup Greek yogurt (or coconut yogurt for a vegan option)

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Base: In a medium mixing bowl, combine the shredded coconut, crushed graham crackers, melted coconut oil, maple syrup, and vanilla extract. Stir until all ingredients are well mixed and sticky.

Form the Layers: Line a small dish or baking pan with parchment paper. Take a handful of the coconut mixture and press it firmly into the bottom of the dish to form a base layer, about 1/2 inch thick. Smooth it out evenly. Repeat this process to create two or three layers, depending on the depth of your dish. Set aside any leftover mixture for topping.

Create the Yogurt Layer: In a separate bowl, mix the Greek yogurt with a drizzle of maple syrup if you prefer it sweeter. This will be your creamy layer between the coconut bases.

Layering with Berries: On top of the coconut base, spread a layer of the yogurt mixture evenly. Then, sprinkle a generous layer of mixed berries over the yogurt. Repeat with another layer of yogurt and more berries if desired.

Finish with Coconut Mixture: Crumble any remaining coconut mixture over the top to garnish. Add an extra handful of berries if desired and some fresh mint leaves for a pop of color.

Chill: Cover your dish with plastic wrap or a lid and refrigerate for at least 2 hours to allow the layers to set and flavors to meld.

Serve: Once chilled, cut into squares or serve it directly with a spoon. Enjoy your refreshing No-Bake Coconut Berry Stacks!
