Mushroom Swiss Cheese Meatloaf

1 lb (450g) ground beef

1 cup mushrooms, finely chopped (any variety you prefer, like cremini or button)

1 cup Swiss cheese, shredded

1 medium onion, finely chopped

2 cloves garlic, minced

1/2 cup breadcrumbs (preferably Italian seasoned)

1/4 cup milk

1 large egg

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon fresh parsley, chopped (optional, for garnish)

1/3 cup ketchup (for topping)

1 tablespoon Dijon mustard (for topping)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C).

    Sauté the Vegetables: In a medium skillet over medium heat, add a teaspoon of olive oil. Sauté the finely chopped onions and garlic for about 3-4 minutes until softened. Add the finely chopped mushrooms and cook for an additional 5-7 minutes until they release their moisture and start to brown. Remove from heat and let cool slightly.

      Mix the Ingredients: In a large mixing bowl, combine the ground beef, sautéed onion and mushroom mixture, shredded Swiss cheese, breadcrumbs, milk, egg, Worcestershire sauce, thyme, salt, and pepper. Mix thoroughly until well combined. Avoid overmixing, as this can make the meatloaf tough.

        Shape the Meatloaf: Line a baking sheet with parchment paper or lightly grease a loaf pan. Transfer the meat mixture to the sheet or pan, and shape it into a loaf.

          Prepare the Topping: In a small bowl, mix together the ketchup and Dijon mustard. Spread this mixture evenly over the top of the meatloaf.

            Bake: Place the meatloaf in the preheated oven and bake for 60-70 minutes, or until the internal temperature reaches 160°F (70°C).

              Rest: Once cooked, remove from the oven and let the meatloaf rest for about 10-15 minutes. This helps retain the juices when slicing.

                Serve: Slice the meatloaf and serve warm, garnished with fresh parsley if desired. This meatloaf pairs wonderfully with mashed potatoes or a side salad.
