Ingredients
  

4 boneless, skinless chicken breasts

1 cup Asiago cheese, grated

2 cups mushrooms (cremini or button), sliced

1 medium onion, finely chopped

4 cloves garlic, minced

1 cup heavy cream

1 cup chicken broth

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon dried thyme

Salt and pepper, to taste

Fresh parsley, for garnish

Instructions
 

Prepare the Chicken:

    - Season the chicken breasts with salt, pepper, and dried thyme on both sides.

      Sear the Chicken:

        - In a large skillet, heat olive oil over medium-high heat. Add the chicken breasts and sear them for about 5-7 minutes on each side until golden brown and cooked through. Remove the chicken from the skillet and set aside.

          Cook the Vegetables:

            - In the same skillet, add the butter. Once melted, add the chopped onion and sauté for about 2-3 minutes until translucent. Stir in the garlic and cook for an additional minute until fragrant.

              - Add the sliced mushrooms and continue to cook for around 5-6 minutes until they are tender and have released their moisture.

                Create the Sauce:

                  - Pour in the chicken broth and bring it to a simmer. Allow it to cook for 3-4 minutes, then stir in the heavy cream. Let the mixture simmer gently for another 3-4 minutes until it thickens slightly.

                    Incorporate the Cheese:

                      - Stir in the grated Asiago cheese until it melts and creates a creamy sauce. Taste and adjust seasoning with additional salt and pepper, if desired.

                        Combine Chicken and Sauce:

                          - Return the seared chicken breasts back into the skillet, spooning the creamy mushroom sauce over the top. Allow everything to simmer together for another 2-3 minutes.
