3/4 cup granulated sugar

1/4 cup brown sugar, packed

1/2 cup unsalted butter, softened

1 large egg

2 cups all-purpose flour

2 teaspoons ground ginger

1 teaspoon ground cinnamon

1 teaspoon baking soda

1/2 teaspoon salt

1/4 teaspoon ground cloves

1/4 teaspoon black pepper (optional, for a kick)

Granulated sugar, for rolling

Preheat the Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.

    Cream the Butter and Sugars: In a large mixing bowl, combine the softened butter, granulated sugar, and brown sugar. Beat together until light and fluffy using an electric mixer (about 3-4 minutes).

      Mix in the Molasses and Egg: Add the molasses and egg to the butter mixture and mix until fully incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, ground ginger, ground cinnamon, baking soda, salt, ground cloves, and optional black pepper. Gradually mix the dry ingredients into the wet mixture, stirring until a soft dough forms.
