Ingredients
  

4 large flour tortillas

1 cup pizza sauce

1 cup shredded mozzarella cheese

½ cup diced bell peppers (red, green, or yellow)

½ cup sliced black olives

½ cup chopped fresh spinach

¼ cup finely chopped red onion

1 tsp dried oregano

1 tsp garlic powder

Olive oil spray

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare Tortillas: Using a round cookie cutter or a glass, cut out 3-4 inch circles from each tortilla. You should get about 10-12 mini tortilla rounds.

      Shape the Cups: Press each tortilla round into the cups of a muffin tin to form little bowls. Gently mold the tortilla to fit the shape of the cup. Lightly spray the tops with olive oil.

        Pre-Bake Tortillas: Place the muffin tin in the preheated oven and bake the tortilla cups for about 8-10 minutes until they’re lightly golden and starting to crisp. Remove from the oven and set aside.

          Assemble the Pizzas: Spoon a small amount of pizza sauce (about 1 tablespoon) into each tortilla cup. Sprinkle a generous layer of shredded mozzarella cheese on top.

            Add Toppings: Evenly distribute the diced bell peppers, sliced black olives, chopped spinach, and red onion over the cheese. Sprinkle with dried oregano and garlic powder for extra flavor.

              Bake Again: Return the muffin tin to the oven and bake for another 10-12 minutes or until the cheese is melted and bubbly.

                Garnish: Remove from the oven and let cool for a couple of minutes. Optionally, garnish with fresh basil leaves before serving.
