6 medium-sized ripe tomatoes

1 can (5 oz) tuna in water, drained

1/4 cup mayonnaise (or Greek yogurt for a lighter option)

1 tablespoon Dijon mustard

1/4 cup finely chopped celery

1/4 cup canned sweet corn, drained

1/4 cup finely diced red onion

2 tablespoons fresh parsley, chopped

Salt and pepper to taste

Optional: a squeeze of lemon juice for freshness

Instructions
 

Prepare the Tomatoes: Carefully slice the tops off the tomatoes to create a lid. Use a small spoon to scoop out the insides, leaving enough flesh to maintain the shape of the tomato. Set the hollowed-out tomatoes aside upside down on a paper towel to drain excess moisture.

    Make the Tuna Salad: In a mixing bowl, combine the drained tuna, mayonnaise (or Greek yogurt), Dijon mustard, chopped celery, sweet corn, diced red onion, and parsley. Stir until well mixed.

      Season the Mixture: Add salt and pepper to taste. If desired, add a squeeze of lemon juice to brighten the flavors and mix well.

        Stuff the Tomatoes: Take each prepared tomato and fill it generously with the tuna salad mixture. Press down lightly to ensure the filling is packed in.
