1 can refrigerated biscuit dough (8 biscuits)

1 lb ground beef or turkey

1 packet taco seasoning (about 1 oz)

1 cup canned diced tomatoes with green chilies (drained)

1 cup black beans (drained and rinsed)

1 cup corn (frozen or canned, drained)

1½ cups shredded Mexican cheese blend

½ cup salsa

½ cup sour cream (for topping)

¼ cup chopped fresh cilantro (for garnish)

1 small jalapeño (sliced, optional, for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Biscuit Cups:

      - Lightly grease a muffin tin with cooking spray.

        - Take each biscuit and flatten it slightly with your hands.

          - Place the flattened biscuit into each muffin cup, pressing it down along the bottom and up the sides to create a cup shape.

            Cook the Meat:

              - In a large skillet, cook the ground beef (or turkey) over medium heat until browned and fully cooked. Drain any excess fat.

                - Stir in the taco seasoning, drained diced tomatoes, black beans, and corn. Cook for an additional 5-7 minutes until heated through.

                  Assemble the Cups:

                    - Spoon about 2 tablespoons of the meat mixture into each biscuit cup.

                      - Top each with a generous sprinkle of shredded Mexican cheese blend.

                        Bake:
