Mini Sweet Corn & Zucchini Fritters

1 cup fresh sweet corn kernels (about 2 ears)

1 medium zucchini, grated and excess moisture squeezed out

1/2 cup all-purpose flour (or gluten-free flour, if preferred)

1/4 cup cornmeal

2 large eggs

1/4 cup grated Parmesan cheese (optional)

2 green onions, finely chopped

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

Salt and pepper to taste

2 tablespoons chopped fresh parsley or cilantro

1/4 cup milk (or plant-based milk)

Oil for frying (olive oil or vegetable oil)

Instructions
 

In a large bowl, combine the sweet corn, grated zucchini, flour, cornmeal, eggs, and milk.

    Add the grated Parmesan cheese (if using), chopped green onions, garlic powder, onion powder, paprika, salt, pepper, and fresh herbs. Mix until well combined, being careful not to overmix.

      Heat a non-stick skillet over medium heat and add enough oil to coat the bottom of the skillet.

        Once the oil is hot, spoon tablespoon-sized amounts of the fritter batter into the skillet, flattening them slightly with the back of the spoon.

          Cook for about 3-4 minutes per side, or until golden brown and crispy. You may need to adjust the heat to prevent burning.

            Remove the fritters and place them on a paper towel-lined plate to absorb excess oil.

              Repeat the process until all the batter is used, adding more oil to the skillet as necessary.

                Serve warm with a dollop of sour cream, Greek yogurt, or your favorite dipping sauce.
