Ingredients

1 can (16.3 oz) refrigerated biscuit dough (like Pillsbury Grands!)

1 lb (450g) ground beef (or turkey for a lighter option)

1/2 cup onion, finely chopped

1/2 cup green bell pepper, finely chopped

1 cup ketchup

1 tbsp Worcestershire sauce

1 tbsp brown sugar

1 tsp mustard

1/2 tsp garlic powder

1/2 tsp black pepper

1 cup shredded cheddar cheese

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Prepare the Biscuit Cups:

      - Open the refrigerated biscuit dough.

        - Separate the biscuits and roll each one out slightly to flatten it a bit.

          - Press each biscuit into the cups of a greased muffin tin, forming little cups. Make sure to keep the sides thick enough to hold the filling.

            Cook the Sloppy Joe Filling:

              - In a large skillet, over medium heat, add the ground beef (or turkey). Cook until browned, breaking it apart with a spatula.

                - Once browned, drain any excess fat. Add chopped onion and green bell pepper to the skillet and sauté until softened, about 3-4 minutes.

                  Make the Sauce:

                    - Stir in the ketchup, Worcestershire sauce, brown sugar, mustard, garlic powder, and black pepper. Mix well to combine and simmer for about 5 minutes until heated through and slightly thickened.

                      Assemble the Biscuit Cups:

                        - Remove the skillet from heat. Spoon the sloppy joe mixture evenly into each biscuit cup, filling them generously.

                          - Top each filled cup with shredded cheddar cheese.

                            Bake:

                              - Place the muffin tin in the preheated oven and bake for 15-20 minutes, or until the biscuit edges are golden brown and the cheese is melted.

                                Serve:

                                  - Let the biscuit cups cool slightly before removing them from the muffin tin. Garnish with fresh parsley for an added touch.

                                    Enjoy:

                                      - Serve warm, and enjoy these delightful Mini Sloppy Joe Biscuit Cups as a fun appetizer, snack, or main dish!
