1 pound mini Italian sausage links (sweet or spicy)

1 red bell pepper, diced

1 green bell pepper, diced

1 yellow onion, sliced

3 cloves garlic, minced

2 tablespoons olive oil

1 teaspoon Italian seasoning

1/2 teaspoon red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Toothpicks or small skewers (for serving)

Cook the Sausages: In a large skillet over medium heat, add the mini Italian sausages. Sauté until they are browned on all sides and fully cooked, about 8-10 minutes. Remove the sausages from the skillet and set aside.

    Sauté the Vegetables: In the same skillet, add the olive oil. Once heated, add the diced bell peppers and sliced onion. Cook for about 5-7 minutes, stirring frequently, until the vegetables are softened and slightly caramelized.

      Add Garlic and Seasoning: Stir in the minced garlic, Italian seasoning, and red pepper flakes (if using). Cook for an additional 1-2 minutes, until fragrant.
