1 lb boneless, skinless chicken breasts

2 tablespoons olive oil

1 teaspoon dried oregano

1 teaspoon garlic powder

Salt and pepper, to taste

4 small whole wheat or pita flatbreads

1 cup cherry tomatoes, halved

1 cucumber, diced

1/2 red onion, finely chopped

1/2 cup Kalamata olives, pitted and sliced

1 cup crumbled feta cheese

1/4 cup fresh parsley, chopped

1/4 cup Greek yogurt

2 tablespoons lemon juice

Zest of 1 lemon

Optional: Sliced radishes and extra lemon wedges for garnish

Cook the Chicken: In a bowl, combine the chicken breasts with olive oil, dried oregano, garlic powder, salt, and pepper. Toss to coat the chicken evenly. Preheat a grill or skillet over medium-high heat. Cook the chicken for 6-7 minutes per side, or until fully cooked through and internal temperature reaches 165°F (75°C). Remove from heat and let it rest for 5 minutes before slicing.

    Prepare the Salad: In a large mixing bowl, combine the cherry tomatoes, cucumber, red onion, Kalamata olives, feta cheese, and parsley. Mix well to incorporate all the ingredients.

      Make the Dressing: In a small bowl, whisk together the Greek yogurt, lemon juice, lemon zest, and a pinch of salt and pepper. This will be your creamy dressing.

        Assemble the Flatbreads: Lay out the flatbreads on a clean surface. Slice the cooked chicken into bite-sized pieces and distribute evenly over the flatbreads. Top with the Greek salad mixture, adding generous portions to each flatbread.
