2 cups shredded hash browns (frozen or fresh)

6 large eggs

1/2 cup milk

1 cup shredded cheddar cheese

1/2 cup diced bell peppers (any color)

1/4 cup finely chopped onion

1/2 cup cooked and crumbled bacon or sausage (optional for meat lovers)

1 teaspoon garlic powder

Salt and pepper to taste

Fresh herbs for garnish (chives or parsley)

Preheat the oven: Start by preheating your oven to 400°F (200°C) and lightly grease a 12-cup muffin tin with cooking spray or olive oil.

    Prepare the hash brown base: In a mixing bowl, combine the shredded hash browns, a pinch of salt, and black pepper. Divide the mixture evenly among the muffin tin cups, pressing down firmly to form a disk. Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and crispy.

      Make the egg mixture: While the hash browns are baking, whisk together the eggs, milk, garlic powder, and a bit of salt and pepper in a separate bowl until fully combined. Stir in the cheese, diced bell peppers, chopped onion, and crumbled bacon or sausage if using.

        Assemble the frittatas: Once the hash brown disks are baked and golden, remove them from the oven. Carefully pour the egg mixture over each hash brown disk, filling each cup to the top.

          Bake the frittatas: Return the muffin tin to the oven and bake for an additional 15-20 minutes, or until the egg is set and the tops are slightly puffed and golden.

            Cool and serve: Allow the mini frittatas to cool in the muffin tin for about 5 minutes. Then, gently run a knife around the edges and pop them out. Garnish with fresh herbs before serving.
