Mini Cucumber Sandwich Bites

Ingredients
  

1 large cucumber, thinly sliced

1 cup cream cheese, softened

1 tablespoon fresh dill, chopped (or 1 teaspoon dried dill)

1 teaspoon lemon juice

1/2 teaspoon garlic powder

Salt and pepper, to taste

8 slices of whole-grain or white bread, crusts removed

Optional: additional dill for garnish

Optional: smoked salmon or turkey slices (for added protein)

Instructions
 

Prepare the Cream Cheese Spread: In a medium bowl, mix the softened cream cheese, chopped dill, lemon juice, garlic powder, salt, and pepper until smooth and well combined.

    Assemble the Sandwiches: Lay out the slices of bread on a clean surface. Spread a generous layer of the cream cheese mixture on one side of each slice of bread. If using, place a thin layer of smoked salmon or turkey on half of the slices.

      Layer the Cucumber: On top of the cream cheese (and optional protein), place 2-3 thin cucumber slices, slightly overlapping.

        Top with Remaining Bread: Place the remaining slices of bread on top, cream cheese side down, to create sandwiches.

          Cut into Bites: With a sharp knife, cut each sandwich into quarters or halves, depending on your preference for bite-sized pieces. Arrange them on a serving platter.

            Garnish (Optional): If desired, add a sprig of fresh dill or a small piece of cucumber on top of each sandwich bite for an extra touch of flavor and presentation.

              Serve and Enjoy: These mini cucumber sandwich bites can be served immediately or covered with plastic wrap and stored in the refrigerator for up to 2 hours before serving.
