Mini Crustless Broccoli Cheddar Quiche

2 cups fresh broccoli florets (chopped)

1 cup shredded sharp cheddar cheese

6 large eggs

1 cup milk (whole or 2%)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon salt (adjust to taste)

1/4 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for a kick)

Cooking spray or olive oil for greasing

Instructions
 

Preheat Oven: Preheat your oven to 375°F (190°C). Ensure the oven rack is in the center position.

    Prepare Muffin Tin: Lightly grease a 12-cup muffin tin with cooking spray or olive oil to prevent sticking.

      Steam Broccoli: Bring a small pot of water to a boil. Place the chopped broccoli florets in a steamer basket over the boiling water (or use a microwave-safe bowl with a little water). Steam for about 3-4 minutes until bright green and slightly tender. Drain and set aside to cool.

        Whisk Eggs and Milk: In a large mixing bowl, whisk together the eggs and milk until thoroughly combined.

          Season the Mixture: Add garlic powder, onion powder, salt, black pepper, and red pepper flakes (if using). Mix well to evenly distribute the seasonings.

            Incorporate Cheese and Broccoli: Stir in the shredded cheddar cheese and the steamed broccoli until they are well incorporated into the egg mixture.

              Fill Muffin Cups: Pour the mixture evenly into the prepared muffin cups, filling each about 2/3 full. Use a spoon to gently press down on the mixture, ensuring it’s compact.

                Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until the quiches are puffed up and a toothpick inserted into the center comes out clean.

                  Cool and Serve: Once baked, remove the quiche bites from the oven and let them cool in the pan for about 5 minutes. Carefully run a knife around the edges to help loosen them, then pop them out and transfer to a cooling rack.
