1 lb ground chicken

1 tablespoon olive oil

1 small onion, diced

2 cloves garlic, minced

1 bell pepper, diced (red or green)

1 packet taco seasoning (1 oz)

1 can (8 oz) refrigerated crescent roll dough

1 cup shredded cheddar cheese

1 cup diced tomatoes (fresh or canned, drained)

1 jalapeño, sliced (optional, for heat)

Fresh cilantro, chopped (for garnish)

Sour cream and salsa (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and prepare a large baking sheet by lining it with parchment paper.

    Cook the Chicken: In a large skillet over medium heat, add the olive oil. Once hot, add the diced onion and sauté for about 2-3 minutes until translucent. Add the minced garlic and cook for another minute until fragrant.

      Add Chicken and Spices: Stir in the ground chicken and cook until it is browned and cooked through, about 5-7 minutes. Sprinkle the taco seasoning over the mixture, add the diced bell pepper, and stir to combine. Cook for an additional 2-3 minutes, ensuring the bell pepper is tender. Remove from heat and let cool slightly.

        Prepare the Crescent Dough: Unroll the crescent roll dough and separate it into triangles. On the prepared baking sheet, arrange the triangles in a ring shape, with the wider ends overlapping slightly and the points facing outward to create a “sun” shape.

          Assemble the Bites: Spoon the cooked chicken mixture into the center of the ring. Then, sprinkle the shredded cheddar cheese and diced tomatoes on top of the chicken. If using jalapeño slices, add them as well.

            Fold and Seal: Take each point of the crescent dough and fold it over the filling, tucking it under the dough at the center to seal. Make sure the filling is enclosed and looks cohesive.

              Bake: Place the baking sheet in the preheated oven and bake for 15-20 minutes, or until the crescent dough is golden brown.

                Serve: Once baked, remove from the oven and let cool for a few minutes. Garnish with freshly chopped cilantro, then cut the ring into “bites.” Serve with sour cream and salsa on the side.
