Mini Chicken Fajita Taco Cones

For the Chicken Fajita Filling:

1 lb (450g) boneless, skinless chicken breasts, sliced into thin strips

1 tablespoon olive oil

1 teaspoon chili powder

1 teaspoon cumin

1 teaspoon garlic powder

Salt and pepper, to taste

1 bell pepper (red, green, or yellow), sliced

1 medium onion, sliced

Juice of 1 lime

For the Taco Cones:

6 small flour tortillas (6-inch size)

Cooking spray or olive oil (for brushing)

Shredded cheese (cheddar or Mexican blend)

Fresh cilantro, for garnish

Optional toppings: sour cream, guacamole, or salsa

Instructions
 

Prepare the Chicken Fajita Filling:

    - In a large skillet, heat the olive oil over medium-high heat.

      - Add the sliced chicken breasts to the skillet and season with chili powder, cumin, garlic powder, salt, and pepper. Sauté for about 5-7 minutes, or until the chicken is cooked through and browned.

        - Add the sliced bell pepper and onion, stirring into the chicken. Cook for an additional 3-4 minutes until the vegetables are softened.

          - Squeeze lime juice over the mixture and stir well. Remove from heat and set aside.

            Create the Taco Cones:

              - Preheat your oven to 375°F (190°C).

                - Take each flour tortilla and place it in the oven for about 10 seconds just to make it pliable.

                  - Using your hands, gently form each tortilla into a cone shape, overlapping the edges and securing with a toothpick.

                    - Place the cones upright in a muffin tin to hold their shape while baking. If you don’t have a muffin tin, use crumpled aluminum foil to support the cones while baking.

                      - Lightly spray or brush the outside of the cones with cooking spray or olive oil, then sprinkle with a bit of salt.

                        Bake the Taco Cones:

                          - Bake the tortilla cones in the preheated oven for 10-12 minutes, or until they are lightly golden and crisp.

                            - Remove from the oven and let them cool slightly before carefully removing the toothpicks.

                              Assemble the Taco Cones:

                                - Fill each taco cone with the chicken fajita filling, pressing down slightly to pack it in.

                                  - Top generously with shredded cheese, and if desired, add fresh cilantro and your favorite toppings such as sour cream, guacamole, or salsa.

                                    Serve and Enjoy:

                                      - Serve the Mini Chicken Fajita Taco Cones immediately while they are warm and crispy.
