Ingredients
  

1 lb shredded cooked chicken (store-bought rotisserie works great)

1 cup enchilada sauce (red or green, your choice)

1 cup shredded cheese (cheddar or Mexican blend)

1/2 cup diced onions (yellow or red)

1/2 cup diced bell pepper (any color)

1/4 cup corn kernels (canned or frozen)

1/2 tsp cumin

1/2 tsp chili powder

Salt and pepper to taste

12 slider buns or mini brioche buns

1/4 cup fresh cilantro, chopped (for garnish)

Sour cream (for serving)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) to prepare for baking the sliders.

    Prepare the Filling: In a large bowl, combine the shredded chicken, enchilada sauce, half of the cheese, diced onions, bell pepper, corn, cumin, chili powder, salt, and pepper. Mix until all the ingredients are well combined.

      Assemble the Sliders: Slice the slider buns in half, creating a top and bottom for each one. Place the bottom halves on a baking sheet lined with parchment paper.

        Fill the Buns: Spoon a generous amount of the chicken enchilada mixture onto each bottom bun. Don’t be shy; pack them full of that delicious filling!
