Instructions

Preheat the Oven: Preheat your oven to 325°F (160°C). Line a mini muffin pan with mini cupcake liners and set aside.

    Make the Crust:

      - In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter until well combined.

        - Press about 1 tablespoon of the mixture into the bottom of each mini muffin liner, creating an even base. Use the back of a spoon to compress it tightly.

          Bake the Crust:

            - Bake the crusts in the preheated oven for 5-7 minutes or until lightly golden. Remove from oven and allow to cool slightly.

              Prepare the Cheesecake Filling:

                - In another mixing bowl, beat the softened cream cheese until smooth and creamy. Gradually add the sugar and continue to beat until well combined.

                  - Mix in the vanilla extract and egg until smooth. Finally, add the sour cream and mix until incorporated.

                    Fill the Crusts:

                      - Spoon or pipe the cheesecake filling onto the cooled crusts, filling each liner about 3/4 full.

                        Bake the Cheesecake Bites:

                          - Bake in the preheated oven for 15-18 minutes, or until the centers are set but still slightly jiggly. They will firm up as they cool.

                            Cool and Chill:

                              - Allow the cheesecake bites to cool at room temperature for about 30 minutes, then refrigerate for at least 2 hours to set.

                                Top with Cherry Filling:

                                  - Once chilled, top each cheesecake bite with a spoonful of cherry pie filling. If desired, garnish with a fresh cherry on top for a pop of color.

                                    Serve:

                                      - Carefully remove the cheesecake bites from the mini muffin pan and serve chilled. Enjoy your delightful mini cherry cheesecake bites!
