2 tablespoons sugar

1/2 teaspoon cinnamon

1/4 cup unsalted butter, melted

For the cheesecake filling:

8 oz cream cheese, softened

1/4 cup sugar

1 teaspoon vanilla extract

1 large egg

1/2 cup sour cream

For the apple topping:

1 large apple, peeled, cored, and diced (Granny Smith or Honeycrisp recommended)

2 tablespoons butter

2 tablespoons brown sugar

1 teaspoon cinnamon

1/4 cup caramel sauce, for drizzling

Instructions

Prepare the crust:

    - Preheat your oven to 325°F (160°C).

      - In a medium bowl, combine the graham cracker crumbs, sugar, cinnamon, and melted butter. Mix until well combined.

        - Press the mixture into the bottom of a mini muffin tin, creating a firm layer. Bake for 5 minutes. Remove and let cool.

          Make the cheesecake filling:

            - In a mixing bowl, beat the softened cream cheese and sugar until smooth and creamy using an electric mixer.

              - Add the vanilla extract and egg, mixing until just combined. Gently fold in the sour cream until smooth and set aside.

                Make the apple topping:

                  - In a skillet over medium heat, melt the butter. Add the diced apple, brown sugar, and cinnamon.

                    - Sauté for 5-7 minutes or until the apples are tender but still hold their shape. Remove from heat and let cool slightly.

                      Assemble the cheesecake bites:

                        - Spoon a small dollop of the cheesecake filling on top of each graham cracker crust, filling about 3/4 full.

                          - Top each cheesecake with a spoonful of the sautéed apple mixture.

                            Bake the cheesecake bites:

                              - Bake the assembled mini cheesecakes in the preheated oven for about 15-18 minutes, or until the filling is set.

                                - Remove from the oven and allow to cool in the tin for 10 minutes before transferring to a wire rack to cool completely.

                                  Finishing touches:

                                    - Once cooled, drizzle each cheesecake bite with caramel sauce for an extra touch of sweetness.

                                      - Refrigerate for at least 1 hour before serving to allow the flavors to meld.
