3 medium zucchinis

1 cup cooked shredded chicken (rotisserie works great)

1/2 cup buffalo sauce (adjust to taste)

1/4 cup cream cheese, softened

1/4 cup shredded sharp cheddar cheese

1/4 cup crumbled blue cheese (optional)

1 tablespoon olive oil

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

Fresh chives or parsley, for garnish

Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.

    Prepare the Zucchini: Wash and dry the zucchinis. Cut them in half lengthwise and scoop out the seeds with a small spoon or melon baller to create cups. Brush the insides lightly with olive oil and season with salt and pepper. Place them hollow side up on the prepared baking sheet.

      Make the Buffalo Chicken Filling: In a bowl, combine the shredded chicken, buffalo sauce, cream cheese, cheddar cheese, garlic powder, onion powder, and blue cheese (if using). Mix until all ingredients are well incorporated.

        Fill the Zucchini Cups: Generously spoon the buffalo chicken mixture into each zucchini half, packing it in slightly.

          Bake: Place the filled zucchini cups in the oven and bake for 20-25 minutes, or until the zucchini is tender and the filling is bubbly and golden.

            Garnish and Serve: Remove from the oven, garnish with chopped chives or parsley, and allow to cool for a few minutes. Serve warm.
