1 can (20 oz) young green jackfruit in water or brine, drained and rinsed

1 cup BBQ sauce (store-bought or homemade)

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon cumin

Salt and pepper, to taste

1 cup mini tortilla chips

1 cup shredded vegan cheese (or regular cheese, if preferred)

1/2 cup diced red onion

1/2 cup diced tomatoes

1/4 cup chopped fresh cilantro, for garnish

1/4 cup sliced jalapeños (optional)

1/4 cup avocado or guacamole (optional for topping)

Instructions
 

Prepare the Jackfruit:

    - Drain and rinse the jackfruit. Pat it dry. In a medium saucepan, heat olive oil over medium heat. Add the jackfruit and use a fork to shred it into smaller pieces, similar to pulled pork.

      Season the Jackfruit:

        - Stir in the smoked paprika, garlic powder, onion powder, cumin, salt, and pepper. Sauté for about 5 minutes, allowing the spices to coat the jackfruit evenly.

          Add BBQ Sauce:

            - Pour in the BBQ sauce and mix well. Reduce heat to low, cover the pan, and let it simmer for about 10 minutes, allowing the flavors to meld together. Stir occasionally.
