1 cup all-purpose flour

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

1/4 cup brown sugar, packed

1/4 cup granulated sugar

1/4 cup unsalted butter, melted

1 large egg

1/2 teaspoon vanilla extract

1/2 cup buttermilk (or 1/2 cup milk with 1/2 teaspoon vinegar added)

1 cup apples, peeled and diced (Granny Smith or Honeycrisp recommended)

1/4 cup chopped walnuts or pecans (optional)

Extra cinnamon sugar for sprinkling (1 tablespoon granulated sugar mixed with 1/2 teaspoon cinnamon)

Instructions
 

Preheat Oven: Preheat your oven to 350°F (175°C) and line a mini muffin tin with paper liners or spray lightly with cooking spray.

    Dry Ingredients: In a large mixing bowl, whisk together the flour, baking powder, baking soda, cinnamon, salt, brown sugar, and granulated sugar until well combined.

      Wet Ingredients: In another bowl, whisk together the melted butter, egg, vanilla extract, and buttermilk until smooth.

        Combine Ingredients: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Do not overmix; it's okay if there are a few lumps.

          Add Apples and Nuts: Fold in the diced apples and chopped nuts (if using) until evenly distributed throughout the batter.

            Fill Muffin Cups: Spoon about one tablespoon of the batter into each mini muffin cup, filling them about three-quarters full. Sprinkle the tops with the cinnamon sugar mixture for added sweetness and texture.

              Bake: Place the muffin tin in the preheated oven and bake for 15-18 minutes, or until the tops are golden brown and a toothpick inserted into the center comes out clean.

                Cool: Once baked, remove the muffin tin from the oven and let the muffin cups cool in the tin for about 5 minutes. Then transfer them to a wire rack to cool completely.
