1 large eggplant

1 cup marinara sauce

1 cup shredded mozzarella cheese

1/2 cup sliced black olives

1/4 cup sliced pepperoni (optional)

1/2 teaspoon dried oregano

1/2 teaspoon garlic powder

1/4 teaspoon red pepper flakes (optional, for heat)

Fresh basil leaves for garnish

Olive oil spray

Instructions
 

Prepare the Eggplant:

    - Wash the eggplant and slice it into 1/2-inch thick rounds. Depending on the size of your eggplant, you should have about 8-10 slices.

      - Sprinkle salt on both sides of the eggplant slices and let them sit for about 15-20 minutes to draw out excess moisture. This helps them become crispy in the air fryer. Rinse off the salt and pat them dry with paper towels.

        Season the Eggplant:

          - Lightly spray each eggplant slice with olive oil.

            - Season both sides with garlic powder, dried oregano, salt, and pepper.

              Air Fry the Eggplant:

                - Preheat your air fryer at 375°F (190°C) for about 5 minutes.

                  - Place the eggplant slices in a single layer in the air fryer basket. (You may need to work in batches depending on your air fryer’s capacity.)

                    - Air fry for about 10-12 minutes, flipping halfway through, until the eggplant is tender and slightly crispy.

                      Assemble the Pizzas:

                        - Once the eggplant slices are cooked, remove them from the air fryer and let them cool slightly.
