4 ears of fresh corn (or 2 cups of frozen corn)

1/2 cup mayonnaise

1/2 cup sour cream

1 cup cotija cheese, crumbled (plus extra for garnish)

1 jalapeño, finely chopped (remove seeds for less heat)

1/4 cup fresh cilantro, chopped

2 tablespoons lime juice (about 1 lime)

1 teaspoon chili powder

Salt and pepper to taste

Tortilla chips, for serving

Prepare the Corn: If using fresh corn, boil the ears in salted water for about 5-7 minutes until tender. Once cooked, let them cool, and then cut the kernels off the cob. If using frozen corn, simply thaw and drain any excess water.

    Mix the Base: In a large mixing bowl, combine mayonnaise, sour cream, lime juice, and chili powder. Stir until smooth and well incorporated.
