Ingredients

1 cup Greek yogurt (plain, full-fat)

1 cup all-purpose flour

1/2 cup granulated sugar

2 large eggs

1 tsp baking powder

1/2 tsp baking soda

1/4 tsp salt

1/4 cup unsalted butter, melted (plus extra for greasing)

1 tsp vanilla extract

Zest of 1 lemon

1/2 cup powdered sugar (for glazing)

2 tbsp milk (for glazing)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan with melted butter.

Mix Wet Ingredients: In a large mixing bowl, combine the Greek yogurt, melted butter, granulated sugar, eggs, vanilla extract, and lemon zest. Whisk these ingredients together until well blended and creamy.

Combine Dry Ingredients: In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, and salt.

Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, folding gently with a spatula until just combined. Be careful not to over-mix; some lumps are okay.

Pipe the Batter: Transfer the batter into a piping bag or a zip-top bag with a corner snipped off, and pipe the batter into the prepared donut pan, filling each mold about 3/4 full.

Bake the Donuts: Place the donut pan in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden and a toothpick comes out clean when inserted into the center. Let the donuts cool in the pan for about 5 minutes before transferring them to a wire rack.

Prepare the Glaze: In a small bowl, whisk together the powdered sugar and milk until smooth. Adjust the consistency by adding more milk or powdered sugar as desired.

Glaze the Donuts: Once the donuts are cool, dip the tops into the glaze, letting the excess drip off. Place the glazed donuts back on the wire rack and allow the glaze to set for a few minutes.

Serve and Enjoy: Enjoy these melt-in-mouth Greek yogurt donuts fresh for breakfast or as a delightful snack!
