Mediterranean Lamb Burgers with Tzatziki

Ingredients
  

1 lb ground lamb

1/4 cup breadcrumbs

1/4 cup finely chopped red onion

2 cloves garlic, minced

1 tbsp fresh parsley, chopped

1 tbsp fresh mint, chopped

1 tsp ground cumin

1 tsp ground coriander

1/2 tsp smoked paprika

Salt and pepper to taste

4 whole wheat burger buns

1 cup arugula or baby spinach

1 medium tomato, sliced

1/2 cucumber, sliced

For the Tzatziki Sauce:

1 cup Greek yogurt

1/2 cucumber, grated and drained

1 clove garlic, minced

1 tbsp fresh dill, chopped

1 tbsp lemon juice

Salt to taste

Instructions
 

Prepare the Tzatziki:

    In a medium bowl, combine the Greek yogurt, grated cucumber (make sure to drain excess moisture), minced garlic, dill, lemon juice, and salt. Mix until well combined. Set aside in the refrigerator to allow the flavors to meld.

      Make the Burger Mix:

        In a large bowl, combine the ground lamb, breadcrumbs, chopped red onion, minced garlic, parsley, mint, cumin, coriander, smoked paprika, salt, and pepper. Mix with your hands or a spatula until everything is well incorporated.

          Form Patties:

            Divide the lamb mixture into 4 equal portions and shape each portion into a patty about 1 inch thick. Make a small indentation in the center of each patty to prevent them from puffing up while cooking.

              Preheat Grill or Skillet:

                Preheat your grill or a large skillet over medium-high heat. If using a skillet, add a drizzle of olive oil to prevent sticking.

                  Cook the Patties:

                    Grill the patties for about 5-6 minutes on each side for medium, or until they reach your desired doneness. Use a meat thermometer to check that the internal temperature reaches at least 160°F (71°C).

                      Prepare the Buns:

                        While the burgers are cooking, you can toast the whole wheat buns on the grill or in a toaster for added texture.

                          Assemble the Burgers:

                            On the bottom half of each bun, place a handful of arugula or baby spinach. Top it with a lamb patty, a slice of tomato, and a few slices of cucumber. Generously drizzle the tzatziki sauce over the top. Place the top half of the bun on each burger.

                              Serve:
