Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

1 large cucumber, diced

1 cup cherry tomatoes, halved

½ red onion, finely chopped

½ bell pepper (red or yellow), diced

¼ cup kalamata olives, pitted and halved

½ cup feta cheese, crumbled

¼ cup fresh parsley, chopped

¼ cup extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon dried oregano

Salt and black pepper, to taste

Juice of 1 lemon

Instructions
 

In a large mixing bowl, combine the drained chickpeas, diced cucumber, halved cherry tomatoes, finely chopped red onion, and diced bell pepper.

    Add the kalamata olives and crumbled feta cheese to the bowl.

      In a small bowl, whisk together the olive oil, red wine vinegar, dried oregano, lemon juice, salt, and black pepper.

        Drizzle the dressing over the salad and gently toss to combine all the ingredients. Make sure everything is evenly coated with the dressing.

          Fold in the chopped parsley for a fresh flavor.

            Taste and adjust the seasoning with additional salt, pepper, or lemon juice if needed.

              Let the salad sit for about 10-15 minutes at room temperature to allow the flavors to meld (or refrigerate if preferred).
