Maple Glazed Zucchini Donuts

1 medium zucchini, grated (about 1 cup)

1 cup all-purpose flour

1/2 cup whole wheat flour

1/2 cup granulated sugar

1/4 cup brown sugar, packed

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp salt

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/2 cup unsweetened applesauce

1/4 cup milk (dairy or non-dairy)

1 large egg

2 tsp vanilla extract

1/4 cup maple syrup (for glaze)

1/2 cup powdered sugar (for glaze)

Optional: chopped walnuts or pecans for topping

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a donut pan or use a silicone donut mold.

    Prepare the Zucchini: Grate the zucchini and place it in a clean kitchen towel. Squeeze out excess moisture to avoid overly wet donuts.

      Mix Dry Ingredients: In a large mixing bowl, whisk together the all-purpose flour, whole wheat flour, granulated sugar, brown sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.

        Combine Wet Ingredients: In another bowl, combine the grated zucchini, applesauce, milk, egg, and vanilla extract. Mix until well combined.

          Combine Mixtures: Gradually add the wet mixture into the dry mixture, stirring until just combined. Do not overmix; the batter should be slightly lumpy.
