Maple Glazed Brussels Sprouts and Apples

1 lb Brussels sprouts, trimmed and halved

2 medium apples (preferably Honeycrisp or Granny Smith), cored and sliced thinly

1/4 cup maple syrup

2 tbsp olive oil

1 tsp salt

1/2 tsp black pepper

1/2 tsp cinnamon

1/4 cup pecans, roughly chopped (optional)

2 tbsp balsamic vinegar

Fresh thyme leaves for garnish (optional)

Instructions
 

Preheat the Oven: Begin by preheating your oven to 400°F (200°C).

    Prepare the Brussels Sprouts: In a large mixing bowl, toss the halved Brussels sprouts with olive oil, salt, black pepper, and cinnamon until well-coated.

      Add the Apples: Gently incorporate the apple slices into the Brussels sprouts mixture, taking care not to break the apple slices too much.

        Glaze the Mixture: Drizzle the maple syrup over the Brussels sprouts and apples, then gently toss again until everything is evenly coated.

          Spread on Baking Sheet: Line a large baking sheet with parchment paper. Spread the Brussels sprouts and apples mixture evenly across the sheet.

            Roast in the Oven: Place the baking sheet in the preheated oven and roast for about 20-25 minutes, tossing halfway through, until the Brussels sprouts are tender and caramelized, and the apples are soft.

              Add Pecans: If using, about 5 minutes before the vegetables are done, sprinkle the chopped pecans on top to toast slightly.

                Finish with Balsamic Vinegar: Once roasted, remove the baking sheet from the oven, and drizzle the balsamic vinegar over the mixture. Toss lightly to combine.

                  Garnish and Serve: Transfer the mixture to a serving dish and garnish with fresh thyme leaves if desired. Serve warm as a side dish.
